TANK ROOM


THESE STAINLESS STEEL TANKS ARE MAINLY USED FERMENTATION DURING HARVEST BUT ALSO FOR BLENDING AND STORAGE. THEY COME IN MANY SHAPES AND SIZES THAT HAVE DIFFERENT ATTRIBUTES.



Taller, skinnier tanks are better for white wines because they allow more of the wine to come
into contact with the cooling jackets during fermentation. These taller tanks also improve yields during settling and cold stabilization. Shorter, wider tanks are better for red wines because they spread out the “cap” of grape skins across the top and reduce the thickness of the cap to allow for easier stirring (punching). This results in better integration of the skins into the winemaking process which is essential for quality red winemaking.
The dimpled area you see around each tank is a cooling jacket, which uses glycol, a heat-exchanging liquid similar to antifreeze, in combination with a mechanical heat exchanger to control the temperature of the wine in the tank.
Advantages to stainless steel tanks are that they do not impart any flavors on the wine and are easy to maintain and have multiple uses during the winemaking process.

The flight of the bumblebee defies physics; their wings are too small and don't flap fast enough to support their weight. Yet somehow, through the sheer force of their will and determination, they fly. Given the nearly impossible climate conditions in North Carolina, Raffaldini should not have been able to make such a spectacular wine, yet we did. Montepulciano, Petit Verdot, and Sagrantino grapes were all harvested at optimal ripeness, triple-sorted, and then dried heavily using the Appassimento drying process to further concentrate the grapes' natural flavors and aromas. We give you the 2017 Grande Riserva.

TANK ROOM


THESE STAINLESS STEEL TANKS ARE MAINLY USED FERMENTATION DURING HARVEST BUT ALSO FOR BLENDING AND STORAGE. THEY COME IN MANY SHAPES AND SIZES THAT HAVE DIFFERENT ATTRIBUTES.



Taller, skinnier tanks are better for white wines because they allow more of the wine to come
into contact with the cooling jackets during fermentation. These taller tanks also improve yields during settling and cold stabilization. Shorter, wider tanks are better for red wines because they spread out the “cap” of grape skins across the top and reduce the thickness of the cap to allow for easier stirring (punching). This results in better integration of the skins into the winemaking process which is essential for quality red winemaking.
The dimpled area you see around each tank is a cooling jacket, which uses glycol, a heat-exchanging liquid similar to antifreeze, in combination with a mechanical heat exchanger to control the temperature of the wine in the tank.
Advantages to stainless steel tanks are that they do not impart any flavors on the wine and are easy to maintain and have multiple uses during the winemaking process.

BOTTI ROOM


BOTTI ARE A TYPE OF LARGE, ENCLOSED, CASK TYPICALLY MADE OF OAK (BUT SOMETIMES CHESTNUT IN ITALY)
USED FOR AGING RED WINE.


Our Bottis are made in Italy and each one holds 2500 Liters, whereas the traditional oak barrel (aka Barrique) is 225 Liters. Like our oak fermenters, each Botti allows for very slight oak and oxygen exchange of the wine to gently mellow the wine without imparting too much oak flavor.


Botti are traditionally used in aging Italy’s classic wines like Barolo.

We also use oak fermenters to make wine. These are exceptional for red winemaking because the open top allows for easy access during fermentation, when the cap of grapes must be agitated regularly. Oak is also porous which allows the wine to interact with the natural tannins of the wood. Additionally, using an oak fermenter enables more interaction with oxygen which helps facilitate the development of the wine. These wood casks are large and used many times over, which means their wood influence on the flavor of the wine is slight.
